Makloba (sudanese Spiced Chicken And Rice Pilaf)
Makloba is a traditional Sudanese dish that features spiced chicken and rice pilaf layered and cooked together. This flavorful and aromatic dish is perfect for a special occasion or a comforting family meal.
Ingredients
- 2 lbs chicken pieces, skin-on
- 2 cups basmati rice
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 4 cups chicken broth
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken pieces with salt, pepper, and half of the ground spices. In a large pot, heat the vegetable oil over medium-high heat and brown the chicken on all sides. Remove the chicken and set aside.
- In the same pot, add the sliced onions and cook until softened. Add the minced garlic and the remaining ground spices, and cook for another minute.
- Add the rice to the pot and stir to coat it with the onion and spice mixture. Pour in the chicken broth and bring to a boil.
- Once boiling, reduce the heat to low and place the browned chicken pieces on top of the rice. Cover the pot and let it simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
- Remove the pot from the heat and let it rest for 10 minutes. Carefully invert the pot onto a large serving platter, allowing the chicken and rice to form a beautiful layered presentation.
