Makloba (sudanese Spiced Chicken And Rice Pilaf)

Ingredients

  • 2 lbs chicken pieces, skin-on
  • 2 cups basmati rice
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 4 cups chicken broth
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken pieces with salt, pepper, and half of the ground spices. In a large pot, heat the vegetable oil over medium-high heat and brown the chicken on all sides. Remove the chicken and set aside.
  2. In the same pot, add the sliced onions and cook until softened. Add the minced garlic and the remaining ground spices, and cook for another minute.
  3. Add the rice to the pot and stir to coat it with the onion and spice mixture. Pour in the chicken broth and bring to a boil.
  4. Once boiling, reduce the heat to low and place the browned chicken pieces on top of the rice. Cover the pot and let it simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
  5. Remove the pot from the heat and let it rest for 10 minutes. Carefully invert the pot onto a large serving platter, allowing the chicken and rice to form a beautiful layered presentation.
