Ingredients
- 2 large eggplants, sliced
- 2 cups tomato sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add the sliced eggplants and cook until golden brown on both sides. Remove from the skillet and set aside.
- In the same skillet, pour the tomato sauce and season with dried oregano, salt, and pepper. Let it simmer for 5 minutes.
- Arrange the cooked eggplant slices in a baking dish. Pour the tomato sauce over the eggplants.
- Sprinkle the mozzarella and Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
