Ingredients

  • 2 large eggplants, sliced
  • 2 cups tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add the sliced eggplants and cook until golden brown on both sides. Remove from the skillet and set aside.
  3. In the same skillet, pour the tomato sauce and season with dried oregano, salt, and pepper. Let it simmer for 5 minutes.
  4. Arrange the cooked eggplant slices in a baking dish. Pour the tomato sauce over the eggplants.
  5. Sprinkle the mozzarella and Parmesan cheese on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool for a few minutes before serving.
