Maklouba (saudi Arabian Spiced Lamb And Rice Pilaf)
Maklouba is a traditional Saudi Arabian dish that features spiced lamb and rice pilaf layered and cooked together. This flavorful and aromatic dish is perfect for a special occasion or a family dinner.
Ingredients
- 2 lbs lamb, cut into chunks
- 2 cups basmati rice
- 1 large onion, sliced
- 3 tomatoes, sliced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground turmeric
- 4 cups chicken or lamb broth
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the sliced onions and cook until they are soft and translucent.
- Add the ground cumin, coriander, cinnamon, and turmeric to the pot. Stir well to coat the onions with the spices.
- Add the rice to the pot and stir to combine with the onions and spices.
- Arrange the browned lamb chunks on top of the rice in an even layer. Place the sliced tomatoes on top of the lamb.
- Pour the chicken or lamb broth over the ingredients in the pot. Season with salt and pepper.
- Cover the pot and let the maklouba simmer for 30-40 minutes, or until the rice is cooked and the lamb is tender.
- Once cooked, carefully invert the pot onto a large serving platter, allowing the layers to flip and create a beautiful presentation.
