Maklouba (saudi Arabian Spiced Lamb And Rice Pilaf)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 cups basmati rice
  • 1 large onion, sliced
  • 3 tomatoes, sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground turmeric
  • 4 cups chicken or lamb broth
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the sliced onions and cook until they are soft and translucent.
  3. Add the ground cumin, coriander, cinnamon, and turmeric to the pot. Stir well to coat the onions with the spices.
  4. Add the rice to the pot and stir to combine with the onions and spices.
  5. Arrange the browned lamb chunks on top of the rice in an even layer. Place the sliced tomatoes on top of the lamb.
  6. Pour the chicken or lamb broth over the ingredients in the pot. Season with salt and pepper.
  7. Cover the pot and let the maklouba simmer for 30-40 minutes, or until the rice is cooked and the lamb is tender.
  8. Once cooked, carefully invert the pot onto a large serving platter, allowing the layers to flip and create a beautiful presentation.
