Maklouba (spiced Rice With Lamb And Raisins)
Maklouba is a traditional Libyan dish that features spiced rice layered with tender lamb and sweet raisins. This flavorful and aromatic dish is perfect for a special occasion or a family gathering.
Ingredients
- 2 cups basmati rice
- 1 pound lamb, cut into cubes
- 1 onion, finely chopped
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 cup raisins
- 3 cups chicken or vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the lamb cubes to the pot and brown on all sides.
- Stir in the turmeric, cumin, and cinnamon, and season with salt and pepper.
- Add the basmati rice to the pot and stir to coat with the spices.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat, cover, and simmer for 15 minutes.
- Scatter the raisins over the rice, cover, and continue to cook for another 10 minutes, or until the rice is tender and the liquid is absorbed.
- Once done, remove the pot from the heat and let it sit for 5 minutes before flipping the pot onto a large serving platter to reveal the layered rice, lamb, and raisins.
