Maklouba (spiced Rice With Lamb And Raisins)

Ingredients

  • 2 cups basmati rice
  • 1 pound lamb, cut into cubes
  • 1 onion, finely chopped
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup raisins
  • 3 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the lamb cubes to the pot and brown on all sides.
  3. Stir in the turmeric, cumin, and cinnamon, and season with salt and pepper.
  4. Add the basmati rice to the pot and stir to coat with the spices.
  5. Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat, cover, and simmer for 15 minutes.
  6. Scatter the raisins over the rice, cover, and continue to cook for another 10 minutes, or until the rice is tender and the liquid is absorbed.
  7. Once done, remove the pot from the heat and let it sit for 5 minutes before flipping the pot onto a large serving platter to reveal the layered rice, lamb, and raisins.
