Maklouba (tunisian Eggplant And Tomato Casserole)
Maklouba is a traditional Tunisian dish that features layers of eggplant, tomato, and rice, all flavored with warm spices. This hearty casserole is perfect for a comforting family meal or a special occasion.
Ingredients
- 2 large eggplants, sliced
- 2 tomatoes, sliced
- 1 cup long-grain rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cinnamon
- 4 cups vegetable broth
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Heat some olive oil in a large pot over medium heat. Fry the eggplant slices until golden brown. Remove and set aside.
- In the same pot, add a bit more oil if needed and sauté the onion and garlic until softened.
- Stir in the rice and spices, then pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.
- Arrange the tomato slices in the bottom of the pot. Layer the fried eggplant on top of the tomatoes.
- Carefully spoon the rice mixture over the eggplant, spreading it out evenly.
- Cover the pot and let it cook on low heat for 30-40 minutes, or until the rice is tender.
- Once done, carefully invert the pot onto a large serving platter, allowing the layers to flip over and create a beautiful presentation.
- Sprinkle with chopped parsley and serve hot.
