Ingredients

  • 2 large eggplants, sliced
  • 2 tomatoes, sliced
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • 4 cups vegetable broth
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Heat some olive oil in a large pot over medium heat. Fry the eggplant slices until golden brown. Remove and set aside.
  2. In the same pot, add a bit more oil if needed and sauté the onion and garlic until softened.
  3. Stir in the rice and spices, then pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.
  4. Arrange the tomato slices in the bottom of the pot. Layer the fried eggplant on top of the tomatoes.
  5. Carefully spoon the rice mixture over the eggplant, spreading it out evenly.
  6. Cover the pot and let it cook on low heat for 30-40 minutes, or until the rice is tender.
  7. Once done, carefully invert the pot onto a large serving platter, allowing the layers to flip over and create a beautiful presentation.
  8. Sprinkle with chopped parsley and serve hot.
