Maklouba is a traditional Tunisian dish that translates to "upside-down" in Arabic. This flavorful seafood paella is a one-pot wonder that is perfect for a special occasion or a family gathering.
Ingredients
- 1 cup long-grain rice
- 1 lb mixed seafood (shrimp, mussels, squid)
- 1 onion, sliced
- 1 eggplant, sliced
- 1 tomato, sliced
- 1 tsp turmeric
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 2 1/2 cups chicken or seafood broth
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced onion and cook until softened.
- Add the mixed seafood to the pot and cook for 2-3 minutes until slightly opaque.
- Stir in the turmeric, cumin, cinnamon, and cayenne pepper, then add the rice and mix well to coat the grains with the spices.
- Arrange the sliced eggplant and tomato over the rice and seafood mixture. Season with salt and pepper.
- Pour the broth over the ingredients, cover the pot, and simmer for 20-25 minutes until the rice is cooked and the seafood is tender.
- Once cooked, carefully invert the pot onto a large serving platter, allowing the rice and seafood to form a beautiful layered presentation.
