Ingredients

  • 1 cup long-grain rice
  • 1 lb mixed seafood (shrimp, mussels, squid)
  • 1 onion, sliced
  • 1 eggplant, sliced
  • 1 tomato, sliced
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 2 1/2 cups chicken or seafood broth
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the sliced onion and cook until softened.
  2. Add the mixed seafood to the pot and cook for 2-3 minutes until slightly opaque.
  3. Stir in the turmeric, cumin, cinnamon, and cayenne pepper, then add the rice and mix well to coat the grains with the spices.
  4. Arrange the sliced eggplant and tomato over the rice and seafood mixture. Season with salt and pepper.
  5. Pour the broth over the ingredients, cover the pot, and simmer for 20-25 minutes until the rice is cooked and the seafood is tender.
  6. Once cooked, carefully invert the pot onto a large serving platter, allowing the rice and seafood to form a beautiful layered presentation.
