Ingredients

  • 2 large eggplants, sliced
  • 1 cup basmati rice
  • 1 onion, thinly sliced
  • 2 tomatoes, sliced
  • 1 red bell pepper, sliced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • 4 cups vegetable broth
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Brush the eggplant slices with olive oil and season with salt and pepper. Grill for 3-4 minutes on each side until tender and lightly charred. Set aside.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook until softened. Add the ground cumin, coriander, turmeric, and cinnamon. Stir for 1-2 minutes until fragrant.
  3. Add the basmati rice to the pot and stir to coat with the spices. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
  4. Arrange the grilled eggplant, sliced tomatoes, and red bell pepper on top of the rice in the pot. Cover and cook for an additional 10-15 minutes until the vegetables are tender and the rice is fully cooked.
  5. Once done, carefully invert the pot onto a large serving platter, allowing the layers to fall and create a beautiful presentation. Serve hot and enjoy!
