Ingredients

  • 1 butternut squash, peeled, seeded, and cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1 cup basmati rice, rinsed and drained
  • 2 cups vegetable broth
  • 1 onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the butternut squash with olive oil, cumin, coriander, cinnamon, salt, and pepper. Spread the squash in a single layer on a baking sheet and roast for 25-30 minutes, or until tender and caramelized.
  3. In a large pot, combine the rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
  4. In a separate pan, sauté the onion and bell pepper until softened. Add the frozen peas and cook for an additional 2-3 minutes.
  5. Once the squash and rice are ready, assemble the maklouba by layering the roasted squash, cooked rice, and sautéed vegetables in a large serving dish. Sprinkle with chopped parsley.
  6. Cover the dish with a plate or lid and let it sit for 5 minutes. Carefully flip the dish onto a large platter, allowing the layers to release and form a beautiful presentation.
  7. Serve the maklouba warm, and enjoy!
