Maklouba (tunisian Spiced Roasted Butternut Squash)
Maklouba is a traditional Tunisian dish that features spiced roasted butternut squash layered with fragrant rice and tender vegetables. This flavorful and aromatic dish is perfect for a cozy family dinner or a special gathering.
Ingredients
- 1 butternut squash, peeled, seeded, and cut into cubes
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 1 cup basmati rice, rinsed and drained
- 2 cups vegetable broth
- 1 onion, thinly sliced
- 1 red bell pepper, sliced
- 1 cup frozen peas
- 1/4 cup chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the butternut squash with olive oil, cumin, coriander, cinnamon, salt, and pepper. Spread the squash in a single layer on a baking sheet and roast for 25-30 minutes, or until tender and caramelized.
- In a large pot, combine the rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- In a separate pan, sauté the onion and bell pepper until softened. Add the frozen peas and cook for an additional 2-3 minutes.
- Once the squash and rice are ready, assemble the maklouba by layering the roasted squash, cooked rice, and sautéed vegetables in a large serving dish. Sprinkle with chopped parsley.
- Cover the dish with a plate or lid and let it sit for 5 minutes. Carefully flip the dish onto a large platter, allowing the layers to release and form a beautiful presentation.
