Ingredients

  • 3 large red bell peppers, roasted and peeled
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a pan, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Add the roasted red peppers, ground cumin, paprika, and cayenne pepper to the pan. Cook for 5 minutes, stirring occasionally.
  4. Transfer the mixture to a blender and blend until smooth.
  5. Season with salt and black pepper to taste.
  6. Transfer the dip to a serving bowl and serve with pita bread or vegetable sticks.
