Makloubeh bi Lahme is a traditional Lebanese dish that translates to "upside-down" in Arabic. It is a flavorful and aromatic one-pot meal made with layers of lamb, bulgur, and vegetables, all cooked together and then flipped upside down for a stunning presentation.
Ingredients
- 1 1/2 lbs lamb, cut into chunks
- 2 cups bulgur, rinsed and drained
- 1 large eggplant, sliced
- 2 large onions, sliced
- 4 tomatoes, sliced
- 1 teaspoon allspice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 3 cups chicken or vegetable broth
- 1/4 cup pine nuts, toasted
- Fresh parsley for garnish
Instructions
- In a large pot, brown the lamb chunks over medium heat. Remove and set aside.
- In the same pot, sauté the onions until translucent. Add the bulgur and spices, and stir to combine.
- Arrange the eggplant slices on top of the bulgur, followed by the tomatoes and the browned lamb.
- Pour the broth over the layers, cover the pot, and simmer for 30-40 minutes until the bulgur is cooked and the flavors have melded together.
- Once cooked, carefully invert the pot onto a large serving platter, allowing the layers to flip upside down. Sprinkle with toasted pine nuts and fresh parsley before serving.
