Ingredients

  • 1 1/2 lbs lamb, cut into chunks
  • 2 cups bulgur, rinsed and drained
  • 1 large eggplant, sliced
  • 2 large onions, sliced
  • 4 tomatoes, sliced
  • 1 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 3 cups chicken or vegetable broth
  • 1/4 cup pine nuts, toasted
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the lamb chunks over medium heat. Remove and set aside.
  2. In the same pot, sauté the onions until translucent. Add the bulgur and spices, and stir to combine.
  3. Arrange the eggplant slices on top of the bulgur, followed by the tomatoes and the browned lamb.
  4. Pour the broth over the layers, cover the pot, and simmer for 30-40 minutes until the bulgur is cooked and the flavors have melded together.
  5. Once cooked, carefully invert the pot onto a large serving platter, allowing the layers to flip upside down. Sprinkle with toasted pine nuts and fresh parsley before serving.
