Makloubeh is a traditional Syrian dish that translates to "upside-down" in Arabic. This flavorful one-pot meal features layers of spiced chicken, vegetables, and rice, all cooked together and then flipped upside down for serving.

Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 cups basmati rice
  • 1 large eggplant, sliced
  • 2 large onions, sliced
  • 4 tomatoes, sliced
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cardamom
  • Salt and pepper to taste
  • 3 cups chicken broth
  • 1/4 cup vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and brown on all sides. Remove the chicken and set aside.
  2. In the same pot, add the sliced onions and cook until softened. Add the eggplant slices and cook until they start to brown.
  3. Sprinkle the spices over the vegetables and stir to combine. Season with salt and pepper.
  4. Add the rice to the pot and stir to coat it with the vegetable and spice mixture.
  5. Carefully arrange the browned chicken pieces on top of the rice and vegetables. Place the tomato slices on top of the chicken.
  6. Pour the chicken broth over the ingredients in the pot. Cover and simmer for 30-40 minutes, or until the rice is cooked and the chicken is tender.
  7. Once cooked, remove the pot from the heat and let it sit for 10 minutes. Then, carefully flip the pot onto a large serving platter, allowing the rice to form a beautiful dome with the chicken and vegetables on top.
