Makloubeh (damascus-style Chicken And Rice)
Makloubeh is a traditional Syrian dish that translates to "upside-down" in Arabic. This flavorful one-pot meal features layers of spiced chicken, vegetables, and rice, all cooked together and then flipped upside down for serving.
Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups basmati rice
- 1 large eggplant, sliced
- 2 large onions, sliced
- 4 tomatoes, sliced
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1/4 tsp ground allspice
- 1/4 tsp ground cardamom
- Salt and pepper to taste
- 3 cups chicken broth
- 1/4 cup vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and brown on all sides. Remove the chicken and set aside.
- In the same pot, add the sliced onions and cook until softened. Add the eggplant slices and cook until they start to brown.
- Sprinkle the spices over the vegetables and stir to combine. Season with salt and pepper.
- Add the rice to the pot and stir to coat it with the vegetable and spice mixture.
- Carefully arrange the browned chicken pieces on top of the rice and vegetables. Place the tomato slices on top of the chicken.
- Pour the chicken broth over the ingredients in the pot. Cover and simmer for 30-40 minutes, or until the rice is cooked and the chicken is tender.
- Once cooked, remove the pot from the heat and let it sit for 10 minutes. Then, carefully flip the pot onto a large serving platter, allowing the rice to form a beautiful dome with the chicken and vegetables on top.
