Makroud (moroccan Date And Walnut Cake)
Makroud is a traditional Moroccan pastry made with dates, walnuts, and a hint of orange blossom water. This sweet and nutty cake is a popular treat in Berber cuisine, often served during special occasions and celebrations.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup semolina
- 1/2 cup vegetable oil
- 1/2 cup water
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp orange blossom water
- 1 cup pitted dates, chopped
- 1/2 cup walnuts, chopped
- 1/4 cup granulated sugar
- 1/4 cup water
- Vegetable oil for frying
Instructions
- In a large bowl, mix the all-purpose flour, semolina, vegetable oil, water, salt, cinnamon, and orange blossom water to form a dough. Knead the dough until smooth, then cover and let it rest for 30 minutes.
- In a separate bowl, combine the chopped dates, chopped walnuts, granulated sugar, and water. Mix well to form a thick paste.
- Divide the dough into small balls, then flatten each ball into a small rectangle. Place a spoonful of the date and walnut mixture in the center of each rectangle, then fold the dough over the filling and seal the edges to form a cylindrical shape.
- Heat vegetable oil in a deep pan over medium heat. Fry the filled dough pieces until golden brown, then remove and drain on paper towels.
- Cut the fried dough into diagonal slices while still warm. Allow the makroud to cool completely before serving.
