Ingredients

  • 3 large oranges, washed and quartered
  • 1 cup almond meal
  • 1 cup sugar
  • 1 cup fine semolina
  • 1/2 cup vegetable oil
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup orange blossom water
  • 1/4 cup powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a food processor, blend the quartered oranges until smooth.
  3. In a large bowl, combine the blended oranges, almond meal, sugar, semolina, vegetable oil, baking powder, vanilla extract, salt, and orange blossom water. Mix until well combined.
  4. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  5. Bake for 40 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
