Makroud (tunisian Spiced Lentil Patties)
Makroud is a popular Tunisian dish made of spiced lentil patties that are crispy on the outside and tender on the inside. This flavorful and nutritious dish is perfect for a light lunch or as an appetizer.
Ingredients
- 1 cup red lentils, rinsed and drained
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- Salt to taste
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
Instructions
- In a medium saucepan, combine the lentils with 2 cups of water. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the lentils are tender. Drain any excess water and transfer the lentils to a large bowl.
- Add the chopped onion, minced garlic, ground cumin, ground coriander, cayenne pepper, chopped cilantro, chopped parsley, and salt to the bowl with the lentils. Mix well to combine.
- Gradually add the flour to the lentil mixture, stirring until it forms a thick, sticky dough.
- Divide the dough into 12 equal portions and shape each portion into a small patty.
- Heat the olive oil in a large skillet over medium heat. Cook the lentil patties for 3-4 minutes on each side, or until golden brown and crispy.
- Transfer the cooked patties to a paper towel-lined plate to drain any excess oil.
- Serve the spiced lentil patties hot with your favorite dipping sauce or as part of a Tunisian-inspired meal.
