Ingredients

  • 1 cup red lentils, rinsed and drained
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • Salt to taste
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil

Instructions

  1. In a medium saucepan, combine the lentils with 2 cups of water. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the lentils are tender. Drain any excess water and transfer the lentils to a large bowl.
  2. Add the chopped onion, minced garlic, ground cumin, ground coriander, cayenne pepper, chopped cilantro, chopped parsley, and salt to the bowl with the lentils. Mix well to combine.
  3. Gradually add the flour to the lentil mixture, stirring until it forms a thick, sticky dough.
  4. Divide the dough into 12 equal portions and shape each portion into a small patty.
  5. Heat the olive oil in a large skillet over medium heat. Cook the lentil patties for 3-4 minutes on each side, or until golden brown and crispy.
  6. Transfer the cooked patties to a paper towel-lined plate to drain any excess oil.
  7. Serve the spiced lentil patties hot with your favorite dipping sauce or as part of a Tunisian-inspired meal.
