Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water)
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, whisk together the pumpkin puree, vegetable oil, and flax eggs.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped walnuts.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
