Makroud (tunisian Spiced Zucchini Fritters)
Makroud is a popular Tunisian dish made with spiced zucchini fritters. These fritters are flavorful, crispy on the outside, and tender on the inside, making them a delicious appetizer or side dish.
Ingredients
- 2 medium zucchinis, grated
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- In a large bowl, combine the grated zucchini, chopped onion, minced garlic, parsley, cumin, paprika, and cayenne pepper.
- Stir in the flour and beaten eggs until well combined. Season with salt and pepper.
- Heat vegetable oil in a large skillet over medium heat.
- Scoop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon.
- Fry the fritters for 3-4 minutes per side, or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve the zucchini fritters hot with your favorite dipping sauce or yogurt.
