Ingredients

  • 2 medium zucchinis, grated

  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the grated zucchini, chopped onion, minced garlic, parsley, cumin, paprika, and cayenne pepper.
  2. Stir in the flour and beaten eggs until well combined. Season with salt and pepper.
  3. Heat vegetable oil in a large skillet over medium heat.
  4. Scoop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon.
  5. Fry the fritters for 3-4 minutes per side, or until golden brown and crispy.
  6. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  7. Serve the zucchini fritters hot with your favorite dipping sauce or yogurt.
