Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1/2 lb ground meat (beef or lamb)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the ground meat to the skillet and cook until browned. Season with cumin, paprika, cinnamon, salt, and pepper.
  3. Stir in the cooked rice and diced tomatoes, and cook for an additional 5 minutes. Remove from heat and set aside.
  4. Cut the tops off the bell peppers and remove the seeds and membranes.
  5. Stuff the bell peppers with the meat and rice mixture, and place them in a deep pot.
  6. Drizzle the stuffed bell peppers with the remaining olive oil and add 1/2 cup of water to the pot.
  7. Cover the pot and cook the stuffed bell peppers over low heat for 30-35 minutes, or until the peppers are tender.
  8. Once cooked, remove the stuffed bell peppers from the pot and place them on a serving dish. Garnish with fresh parsley before serving.
