Ingredients

  • 2 cups fine semolina
  • 1/2 cup unsalted butter, melted
  • 1/4 cup orange blossom water
  • 1/4 teaspoon salt
  • 1 cup pitted dates, chopped
  • 1 cup almonds, finely ground
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup honey
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, mix the semolina, melted butter, orange blossom water, and salt until well combined. Knead the mixture into a smooth dough, then cover and let it rest for 30 minutes.
  2. In a separate bowl, combine the chopped dates, ground almonds, cinnamon, and honey to make the filling.
  3. Divide the dough into small balls and flatten each ball into a small rectangle. Place a small amount of the date and almond filling in the center of each rectangle, then fold the dough over the filling to encase it completely. Shape the filled dough into small logs, then cut each log into bite-sized pieces.
  4. Heat the vegetable oil in a deep frying pan over medium heat. Fry the biscuits in batches until they are golden brown, then transfer them to a paper towel-lined plate to drain and cool.
  5. Preheat the oven to 350°F (175°C). Place the fried biscuits on a baking sheet and bake for 10-15 minutes until they are crispy and golden.
