Ingredients
- 500g thinly sliced beef
- 300g lamb, thinly sliced
- 200g beef tripe, cleaned and sliced
- 300g firm tofu, cubed
- 150g enoki mushrooms, bottom trimmed
- 150g shiitake mushrooms, sliced
- 150g napa cabbage, sliced
- 150g bean sprouts
- 100g glass noodles
- 4 cups chicken stock
- 4 cups water
- 1 cup Sichuan peppercorns
- 1 cup dried red chilies
- 1/2 cup vegetable oil
- 1/2 cup soy sauce
- 1/4 cup Chinese rice wine
- 4 green onions, chopped
- 4 cloves garlic, minced
- 1 piece ginger, sliced
Instructions
- In a large pot, combine the chicken stock, water, Sichuan peppercorns, dried red chilies, vegetable oil, soy sauce, Chinese rice wine, green onions, garlic, and ginger. Bring to a boil and let it simmer for 30 minutes to infuse the flavors.
- Arrange the beef, lamb, beef tripe, tofu, mushrooms, napa cabbage, bean sprouts, and glass noodles on a platter.
- Prepare a portable stove for the hot pot at the dining table.
- Once the broth is ready, transfer it to the hot pot and place it on the portable stove. Allow the broth to continue simmering.
- Each guest can then cook their desired ingredients in the hot pot, using chopsticks or a small strainer to retrieve the cooked items.
