Malabar Chicken Curry

Ingredients

  • 1 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/2 cup coconut milk
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp garam masala
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat oil in a large pan and sauté the onions until golden brown.
  2. Add the ginger-garlic paste and sauté for 2 minutes.
  3. Next, add the chicken pieces and cook until they are no longer pink.
  4. Stir in the tomato puree, turmeric powder, red chili powder, and salt. Cook for 10 minutes.
  5. Pour in the coconut milk and simmer for another 15 minutes.
  6. Sprinkle garam masala and cook for an additional 5 minutes.
  7. Remove from heat and serve hot with steamed rice or naan.
