Malabar Chicken Dum Biryani
Malabar Chicken Dum Biryani is a traditional dish from the Kerala Cuisine, known for its rich and aromatic flavors. This biryani is a perfect blend of fragrant rice, tender chicken, and a medley of spices, slow-cooked to perfection.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 4 green chilies, slit
- 1/4 cup mint leaves
- 1/4 cup coriander leaves
- 1/2 cup ghee
- 1/4 cup oil
- 1 tbsp ginger-garlic paste
- Whole spices: bay leaf, cinnamon, cardamom, cloves
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp biryani masala
- Saffron strands soaked in milk
- Salt to taste
Instructions
- Wash and soak the basmati rice for 30 minutes. Drain and set aside.
- Marinate the chicken with yogurt, ginger-garlic paste, turmeric powder, red chili powder, biryani masala, mint leaves, coriander leaves, and salt. Let it marinate for 1 hour.
- Heat ghee and oil in a large pot. Add the whole spices and sauté until fragrant.
- Add the sliced onions and cook until golden brown.
- Layer the marinated chicken, tomatoes, and green chilies over the onions.
- Spread the soaked rice evenly over the chicken layer.
- Drizzle saffron milk over the rice. Cover the pot with a tight-fitting lid and cook on low heat for 30-40 minutes until the rice and chicken are cooked through.
- Gently mix the biryani before serving to combine the layers.
