Malabar Fish Curry

Ingredients

  • 500g fish fillets
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 inch ginger, grated
  • 4 garlic cloves, minced
  • 1 sprig curry leaves
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp fenugreek seeds
  • 1 cup thick coconut milk
  • Salt to taste
  • 2 tbsp coconut oil

Instructions

  1. Marinate the fish fillets with turmeric powder and salt. Set aside for 15 minutes.
  2. Heat coconut oil in a pan and add fenugreek seeds. Once they start to splutter, add chopped onions, ginger, garlic, and curry leaves. Sauté until the onions turn golden brown.
  3. Add tomatoes, red chili powder, and coriander powder. Cook until the tomatoes are soft and the oil starts to separate.
  4. Gently place the marinated fish fillets into the pan. Pour thick coconut milk over the fish.
  5. Cover and cook for 10-15 minutes on low heat until the fish is cooked through and the curry thickens.
  6. Adjust the seasoning and garnish with fresh curry leaves.
