Malabar Prawn Curry
Malabar Prawn Curry is a delicious and aromatic dish that originates from the Anglo-Indian cuisine. This flavorful curry is made with succulent prawns and a blend of traditional Indian spices, coconut milk, and curry leaves.
Ingredients
- 500g prawns, peeled and deveined
- 2 tbsp coconut oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 green chilies, slit lengthwise
- 1 tomato, chopped
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1 cup thick coconut milk
- A handful of curry leaves
- Salt to taste
Instructions
- Heat coconut oil in a pan and sauté the onions, garlic, and ginger until golden.
- Add the green chilies and tomatoes, and cook until the tomatoes are soft.
- Stir in the turmeric, red chili, coriander, and cumin powders, and cook for a minute.
- Add the prawns and cook for 2-3 minutes until they turn pink.
- Pour in the coconut milk, add curry leaves, and season with salt. Simmer for 5-7 minutes.
- Once the curry thickens slightly, remove from heat and serve hot with steamed rice or bread.
