Malabar Spinach With Shrimp (pui Shak Chingri)

Ingredients

  • 1 lb Malabar spinach, washed and chopped
  • 1 lb medium-sized shrimp, peeled and deveined
  • 1 onion, finely chopped
  • 3-4 garlic cloves, minced
  • 1-inch ginger, grated
  • 2-3 green chilies, sliced
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tbsp oil

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add chopped onions and sauté until golden brown.
  3. Add minced garlic, grated ginger, and green chilies. Sauté for 2-3 minutes.
  4. Add turmeric, cumin, and coriander powder. Stir well.
  5. Add the chopped Malabar spinach and cook until wilted.
  6. Add the shrimp and cook for 5-7 minutes or until they turn pink and opaque.
  7. Season with salt and cook for another 2-3 minutes.
  8. Remove from heat and serve hot.
