Ingredients

  • 4 cups milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 tsp rose water
  • 1/4 cup water
  • 1/2 cup sugar for the syrup
  • 1/4 cup water for the syrup
  • Chopped pistachios or almonds for garnish

Instructions

  1. In a small bowl, mix the cornstarch with a little bit of the milk to create a slurry.
  2. In a saucepan, heat the remaining milk and sugar over medium heat until it starts to simmer.
  3. Slowly pour the cornstarch slurry into the simmering milk while whisking constantly.
  4. Continue to cook and whisk until the mixture thickens, then remove from heat and stir in the rose water.
  5. Pour the mixture into serving bowls and refrigerate for at least 2 hours to set.
  6. In a small saucepan, combine the water and sugar for the syrup and bring to a boil, then simmer for 5 minutes until slightly thickened.
  7. Let the syrup cool, then drizzle it over the set malabi and sprinkle with chopped nuts before serving.
