Malabi Magic
Malabi is a popular Israeli dessert made with milk, sugar, and rose water, topped with a sweet syrup and chopped nuts. It's a creamy and refreshing treat that is perfect for a hot day.
Ingredients
- 4 cups milk
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 tsp rose water
- 1/4 cup water
- 1/2 cup sugar for the syrup
- 1/4 cup water for the syrup
- Chopped pistachios or almonds for garnish
Instructions
- In a small bowl, mix the cornstarch with a little bit of the milk to create a slurry.
- In a saucepan, heat the remaining milk and sugar over medium heat until it starts to simmer.
- Slowly pour the cornstarch slurry into the simmering milk while whisking constantly.
- Continue to cook and whisk until the mixture thickens, then remove from heat and stir in the rose water.
- Pour the mixture into serving bowls and refrigerate for at least 2 hours to set.
- In a small saucepan, combine the water and sugar for the syrup and bring to a boil, then simmer for 5 minutes until slightly thickened.
- Let the syrup cool, then drizzle it over the set malabi and sprinkle with chopped nuts before serving.
