Malabi Pancakes
Malabi Pancakes are a delicious Israeli twist on the classic pancake, featuring a creamy and fragrant malabi sauce. This recipe is perfect for a special breakfast or brunch.
Ingredients
- 1 cup all-purpose flour
- 2 eggs
- 1 cup milk
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon rose water
- 1/4 cup cornstarch
- 2 cups coconut milk
- 1/4 cup chopped pistachios, for garnish
- 1/4 cup shredded coconut, for garnish
Instructions
- In a bowl, whisk together the flour, eggs, milk, sugar, and vanilla extract to make the pancake batter.
- Heat a non-stick pan over medium heat and pour a ladleful of batter onto the pan. Cook until bubbles form on the surface, then flip and cook the other side until golden brown. Repeat with the remaining batter to make pancakes.
- In a saucepan, whisk together the cornstarch and coconut milk. Cook over medium heat, stirring constantly, until the mixture thickens into a pudding-like consistency.
- Remove the coconut pudding from the heat and stir in the rose water. Let it cool slightly.
- To serve, place a pancake on a plate and spoon the coconut pudding over it. Sprinkle with chopped pistachios and shredded coconut.
