Ingredients
- 1.5 lbs (700g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 ripe plantains, peeled and sliced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (14 oz/400ml) coconut milk
- 1 cup (240ml) chicken broth
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- Fresh cilantro, for garnish
Instructions
- In a large pot or deep skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened, about 3 minutes.
- Add the minced garlic, diced red bell pepper, curry powder, ground cumin, paprika, salt, and black pepper. Cook for another 2 minutes, stirring frequently.
