Malabon Noodles (pancit Malabon)
Malabon Noodles, also known as Pancit Malabon, is a popular noodle dish in Kapampangan cuisine. It is a flavorful and colorful dish that is often served during special occasions and gatherings.
Ingredients
- 1 lb thick rice noodles
- 1 cup shrimp, peeled and deveined
- 1 cup squid, sliced into rings
- 1 cup smoked fish flakes
- 1 cup pork belly, sliced into thin strips
- 4 cups shrimp stock
- 1/2 cup annatto oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 3 tablespoons fish sauce
- 1/2 cup chicharron (pork cracklings), crushed
- 4 hard-boiled eggs, sliced
- 1/2 cup green onions, chopped
- 1/2 cup fresh cilantro, chopped
- Calamansi or lemon wedges for serving
Instructions
- Boil the rice noodles according to package instructions, then drain and set aside.
- In a large pan, heat the annatto oil and sauté the garlic and onion until fragrant.
- Add the pork belly and cook until browned, then add the shrimp and squid. Cook until the seafood is opaque.
- Pour in the shrimp stock and bring to a simmer. Season with fish sauce.
- Arrange the cooked noodles on a serving platter and pour the seafood and broth mixture over the noodles.
- Top with smoked fish flakes, crushed chicharron, sliced hard-boiled eggs, green onions, and cilantro.
- Serve with calamansi or lemon wedges on the side.
