Malabon Noodles (pancit Malabon)

Ingredients

  • 1 lb thick rice noodles
  • 1 cup shrimp, peeled and deveined
  • 1 cup squid, sliced into rings
  • 1 cup smoked fish flakes
  • 1 cup pork belly, sliced into thin strips
  • 4 cups shrimp stock
  • 1/2 cup annatto oil
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 3 tablespoons fish sauce
  • 1/2 cup chicharron (pork cracklings), crushed
  • 4 hard-boiled eggs, sliced
  • 1/2 cup green onions, chopped
  • 1/2 cup fresh cilantro, chopped
  • Calamansi or lemon wedges for serving

Instructions

  1. Boil the rice noodles according to package instructions, then drain and set aside.
  2. In a large pan, heat the annatto oil and sauté the garlic and onion until fragrant.
  3. Add the pork belly and cook until browned, then add the shrimp and squid. Cook until the seafood is opaque.
  4. Pour in the shrimp stock and bring to a simmer. Season with fish sauce.
  5. Arrange the cooked noodles on a serving platter and pour the seafood and broth mixture over the noodles.
  6. Top with smoked fish flakes, crushed chicharron, sliced hard-boiled eggs, green onions, and cilantro.
  7. Serve with calamansi or lemon wedges on the side.
