Ingredients
- 2 lbs (900g) beef stew meat, cut into chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 2 cups (480ml) beef broth
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the beef chunks and brown them on all sides.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
- Stir in the diced tomatoes, sliced carrots, and diced potatoes. Cook for a few minutes.
- Pour in the beef broth and add the paprika, cumin, ginger, salt, and pepper. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 2 hours, or until the beef is tender.
- Adjust the seasoning if needed, and serve the Malagasy beef stew hot.
