Ingredients

  • 2 lbs (900g) beef stew meat, cut into chunks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 cups (480ml) beef broth
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the beef chunks and brown them on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. Stir in the diced tomatoes, sliced carrots, and diced potatoes. Cook for a few minutes.
