Malagasy Coconut Curry Chicken (Poulet au curry et à la noix de coco malgache)

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 tablespoon curry powder
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped (for garnish)

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Season the chicken thighs with salt, pepper, and curry powder.
  2. Add the chicken thighs to the skillet and cook until golden brown on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion, garlic, and ginger. Cook until the onion is soft and translucent, about 5 minutes.
  4. Pour in the coconut milk and chicken broth, then return the chicken thighs to the skillet. Bring the liquid to a simmer, then cover and cook for 30 minutes, or until the chicken is cooked through.
  5. Once the chicken is cooked, remove it from the skillet and set aside. Simmer the sauce for an additional 10 minutes to thicken.
  6. Return the chicken to the skillet to coat it with the sauce. Garnish with chopped cilantro before serving.
