Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 tablespoon curry powder
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 2 tablespoons fresh cilantro, chopped (for garnish)
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Season the chicken thighs with salt, pepper, and curry powder.
- Add the chicken thighs to the skillet and cook until golden brown on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion, garlic, and ginger. Cook until the onion is soft and translucent, about 5 minutes.
- Pour in the coconut milk and chicken broth, then return the chicken thighs to the skillet. Bring the liquid to a simmer, then cover and cook for 30 minutes, or until the chicken is cooked through.
- Once the chicken is cooked, remove it from the skillet and set aside. Simmer the sauce for an additional 10 minutes to thicken.
- Return the chicken to the skillet to coat it with the sauce. Garnish with chopped cilantro before serving.
