Malagasy Fried Rice (Riz sauté à la malgache)

Ingredients

  • 3 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1/2 cup green peas
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced carrot and green peas, and stir-fry for a few minutes until the vegetables are tender-crisp.
  4. Push the vegetables to one side of the pan, and pour the beaten eggs into the empty space. Scramble the eggs until they are cooked through.
  5. Add the cooked rice to the pan, and stir-fry with the vegetables and eggs.
  6. Pour the soy sauce over the rice, and continue to stir-fry until everything is well combined and heated through.
  7. Season with salt and pepper to taste.
  8. Remove from heat and serve hot.
