Malagasy Vanilla Rice Pudding (Riz au lait à la vanille malgache)

Ingredients

  • 1 cup of short-grain rice
  • 4 cups of whole milk
  • 1/2 cup of sugar
  • 1 vanilla bean, split and seeds scraped
  • 1/4 teaspoon of salt

Instructions

  1. In a large saucepan, combine the rice, milk, sugar, vanilla bean and seeds, and salt.
  2. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer, stirring frequently, for 30-35 minutes or until the rice is tender and the mixture has thickened.
  3. Remove the saucepan from the heat and let the rice pudding cool for 5 minutes.
  4. Discard the vanilla bean and transfer the rice pudding to serving dishes.
  5. Refrigerate for at least 2 hours before serving.
