Malai Kofta Makhani
Malai Kofta Makhani is a classic North Indian dish that consists of soft and creamy kofta (vegetable balls) served in a rich and flavorful tomato-based gravy. This dish is a perfect combination of indulgent flavors and comforting textures.
Ingredients
- 2 cups boiled and mashed potatoes
- 1 cup grated paneer (Indian cottage cheese)
- 1/4 cup cornflour
- 1/4 cup chopped cashews and raisins
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 cup heavy cream
- 1 cup tomato puree
- 1/2 cup cashew paste
- 1 tablespoon ginger-garlic paste
- 1 teaspoon kasuri methi (dried fenugreek leaves)
- 2 tablespoons butter
- 2 tablespoons oil
- Salt to taste
Instructions
- Mix the mashed potatoes, grated paneer, cornflour, chopped cashews and raisins, garam masala, red chili powder, and salt. Shape the mixture into small balls and deep fry until golden brown. Set aside.
- Heat oil in a pan, add ginger-garlic paste, and sauté for a minute. Add tomato puree, cashew paste, turmeric powder, and cook for 5 minutes.
- Add the kasuri methi, garam masala, and salt. Stir in the heavy cream and cook for another 2 minutes.
- Heat butter in a separate pan, add the tomato gravy, and gently place the kofta balls in the gravy. Simmer for 5 minutes.
- Garnish with cream and serve hot with naan or rice.
