Malawian Spiced Chicken (zomba Zing)

Ingredients

  • 4 chicken thighs
  • 2 tablespoons ground coriander
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1/4 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together the ground coriander, paprika, cumin, turmeric, ginger, and cayenne pepper.
  2. Rub the spice mixture all over the chicken thighs and let them marinate for 15 minutes.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
  5. Pour in the chicken broth and coconut milk, then return the chicken thighs to the skillet. Bring the liquid to a simmer, then cover and cook for 25-30 minutes, or until the chicken is cooked through.
  6. Season with salt and pepper to taste before serving.
