Malawian Spiced Chicken (zomba Zing)

Ingredients
- 4 chicken thighs
- 2 tablespoons ground coriander
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 teaspoon ground ginger
- 1/2 teaspoon cayenne pepper
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 cup chicken broth
- 1/4 cup coconut milk
- Salt and pepper to taste
Instructions
- In a small bowl, mix together the ground coriander, paprika, cumin, turmeric, ginger, and cayenne pepper.
- Rub the spice mixture all over the chicken thighs and let them marinate for 15 minutes.
- Heat the vegetable oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
- Pour in the chicken broth and coconut milk, then return the chicken thighs to the skillet. Bring the liquid to a simmer, then cover and cook for 25-30 minutes, or until the chicken is cooked through.
- Season with salt and pepper to taste before serving.
