Malaysian Pancake With Peanut Filling (apam Balik)

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup water
  • 2 tablespoons melted butter
  • 1/2 cup roasted peanuts, chopped
  • 3 tablespoons granulated sugar
  • 2 tablespoons sweetened condensed milk
  • 2 tablespoons butter

Instructions

  1. In a bowl, mix the all-purpose flour, baking powder, baking soda, sugar, and salt.
  2. Add the egg, water, and melted butter to the dry ingredients. Mix until smooth.
  3. Heat a non-stick pan over medium heat. Pour a ladle of batter into the pan and spread it out thinly.
  4. Cook until bubbles form on the surface and the edges start to crisp up. Sprinkle chopped peanuts and sugar on one half of the pancake.
  5. Drizzle sweetened condensed milk over the peanut filling. Fold the pancake in half to enclose the filling.
  6. Continue cooking until the pancake is golden brown and crispy. Remove from the pan and repeat with the remaining batter.
  7. For the peanut filling, melt butter in a pan and add chopped peanuts and sugar. Cook until the sugar caramelizes and the peanuts are coated. Set aside to cool.
