Ingredients

  • 1 red bell pepper, diced

  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 cups of vegetable broth
  • 2 tablespoons of olive oil

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes until they are pliable. Remove and set aside.
  2. In a large bowl, mix together the rice, onion, carrots, zucchini, red bell pepper, tomato paste, cumin, paprika, salt, and pepper.
  3. Place a spoonful of the rice and vegetable mixture onto each cabbage leaf and roll it up, tucking in the sides as you go.
