Ingredients

  • 1 large head of cabbage
  • 1 pound ground lamb
  • 1 cup long-grain white rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) crushed tomatoes
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 1/4 cup fresh lemon juice
  • 1/4 cup chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for 5-7 minutes, or until the outer leaves are softened. Remove the cabbage from the water and carefully peel off the leaves. Set aside.
  2. In a large bowl, combine the ground lamb, rice, onion, garlic, allspice, cinnamon, nutmeg, cayenne pepper, salt, and pepper. Mix well.
  3. Place a spoonful of the lamb and rice mixture onto each cabbage leaf. Roll the leaves, tucking in the sides, to form neat rolls.
  4. In a large pot, arrange the cabbage rolls in a single layer. Pour the crushed tomatoes and chicken broth over the rolls. Season with salt and pepper. Place a heavy plate on top of the rolls to keep them submerged in the liquid.
  5. Cover the pot and bring the liquid to a simmer over medium heat. Reduce the heat to low and cook for 45-50 minutes, or until the rice is tender and the lamb is cooked through.
  6. Drizzle the lemon juice over the cabbage rolls and sprinkle with chopped parsley before serving.
