Ingredients

  • 1 large head of cabbage
  • 1 lb ground lamb
  • 1 cup long-grain white rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for 5-7 minutes until the outer leaves are softened. Remove the cabbage from the water and carefully peel off the leaves. Trim the thick center vein from each leaf.
  2. In a large bowl, combine the ground lamb, rice, onion, tomatoes, garlic, cumin, cinnamon, allspice, cayenne pepper, parsley, salt, and pepper. Mix well to combine.
  3. Place a spoonful of the lamb and rice mixture onto each cabbage leaf. Roll the leaf around the filling, tucking in the sides as you roll, to create a neat package.
  4. Heat the olive oil in a large pot over medium heat. Place the cabbage rolls seam side down in the pot. Pour the broth over the rolls. Cover and simmer for 45-50 minutes, or until the rice is cooked and the cabbage is tender.
  5. Serve the Malfouf Mahshi hot, garnished with additional parsley if desired.
