Maltese Cannoli (kannoli Ta' Malta)

Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter, softened
- 1/2 cup dry white wine
- 1 egg white, lightly beaten
- Vegetable oil, for frying
- 1 1/2 cups ricotta cheese
- 1/2 cup powdered sugar
- 1/4 cup chopped chocolate or candied fruit
Instructions
- In a large bowl, combine the flour, sugar, cinnamon, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add the wine, tossing with a fork until a dough forms.
- Divide the dough into two portions. On a floured surface, roll each portion into a 12x6-inch rectangle. Cut each rectangle into six 6-inch squares.
- Wrap each square around a metal cannoli tube, sealing the edges with egg white.
- In an electric skillet or deep-fat fryer, heat oil to 375°F. Fry the cannoli, a few at a time, for 1-2 minutes on each side or until golden brown. Drain on paper towels. Carefully remove tubes and cool shells.
- In a small bowl, combine the ricotta, powdered sugar, and chocolate or candied fruit. Spoon into a pastry bag or resealable plastic bag; cut a small hole in the corner of the bag. Pipe into cannoli shells. Serve immediately.
