Maltese Fish Soup (aljotta À La Malta)

Ingredients

  • 1 kg fresh fish (such as grouper or sea bass), cleaned and cut into chunks
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, chopped
  • 1 bay leaf
  • 1 tbsp tomato paste
  • 1.5 L fish stock
  • 1/2 cup white wine
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Crusty bread for serving

Instructions

  1. In a large pot, sauté the onions and garlic until softened.
  2. Add the tomatoes, bay leaf, and tomato paste, and cook for a few minutes.
  3. Pour in the fish stock and white wine, then add the fish chunks. Simmer for 30 minutes.
  4. Stir in the parsley, and season with salt and pepper.
  5. Serve the soup hot with crusty bread.
