Maltese Fish Soup (aljotta À La Malta)
This traditional Maltese fish soup is a flavorful and comforting dish that is perfect for a cozy dinner.
Ingredients
- 1 kg fresh fish (such as grouper or sea bass), cleaned and cut into chunks
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, chopped
- 1 bay leaf
- 1 tbsp tomato paste
- 1.5 L fish stock
- 1/2 cup white wine
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Crusty bread for serving
Instructions
- In a large pot, sauté the onions and garlic until softened.
- Add the tomatoes, bay leaf, and tomato paste, and cook for a few minutes.
- Pour in the fish stock and white wine, then add the fish chunks. Simmer for 30 minutes.
- Stir in the parsley, and season with salt and pepper.
- Serve the soup hot with crusty bread.
