Maltese Ravioli (ravjul Malti)
Maltese Ravioli, also known as Ravjul Malti, is a traditional dish from the Mediterranean island of Malta. Ingredients
- 2 cups all-purpose flour
- 2 eggs
- 1/2 teaspoon salt
- 1 pound ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon black pepper
- 2 cups tomato sauce
- 1/4 cup olive oil
Instructions
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs. Mix until the dough comes together. Knead the dough on a floured surface until smooth, then cover and let it rest for 30 minutes.
- In another bowl, mix the ricotta, Parmesan, parsley, nutmeg, and black pepper for the filling.
- Roll out the dough and cut into circles. Place a spoonful of filling in the center of each circle, then fold the dough over and seal the edges.
- In a pot of boiling salted water, cook the ravioli for 5-7 minutes until they float to the surface. Drain and set aside.
- In a separate saucepan, heat the tomato sauce with olive oil. Serve the ravioli with the tomato sauce on top.
