Malu Kottu (spicy Sri Lankan Fish Kottu Roti)

Ingredients
- 500g boneless fish fillets, cut into small pieces
- 4 roti, chopped into small pieces
- 1 onion, finely sliced
- 2 green chilies, chopped
- 1 tomato, diced
- 1 bell pepper, thinly sliced
- 2 eggs
- 2 tbsp vegetable oil
- 1 tsp chili powder
- 1 tsp turmeric powder
- 1 tsp curry powder
- 1 tsp cumin seeds
- 1/2 tsp black pepper
- 1/2 cup chopped scallions
- Salt to taste
Instructions
- Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
- Add sliced onion, green chilies, and bell pepper. Sauté until the vegetables are tender.
- Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until cooked.
- Add the fish pieces, chili powder, turmeric powder, curry powder, black pepper, and salt. Cook until the fish is fully cooked.
- Stir in the chopped tomatoes and scallions. Cook for an additional 2-3 minutes.
- Add the chopped roti to the pan and mix everything together. Cook for a few more minutes until the roti is heated through.
- Remove from heat and serve hot.
