Malu Kottu (spicy Sri Lankan Fish Kottu Roti)

Ingredients

  • 500g boneless fish fillets, cut into small pieces
  • 4 roti, chopped into small pieces
  • 1 onion, finely sliced
  • 2 green chilies, chopped
  • 1 tomato, diced
  • 1 bell pepper, thinly sliced
  • 2 eggs
  • 2 tbsp vegetable oil
  • 1 tsp chili powder
  • 1 tsp turmeric powder
  • 1 tsp curry powder
  • 1 tsp cumin seeds
  • 1/2 tsp black pepper
  • 1/2 cup chopped scallions
  • Salt to taste

Instructions

  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add sliced onion, green chilies, and bell pepper. Sauté until the vegetables are tender.
  3. Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until cooked.
  4. Add the fish pieces, chili powder, turmeric powder, curry powder, black pepper, and salt. Cook until the fish is fully cooked.
  5. Stir in the chopped tomatoes and scallions. Cook for an additional 2-3 minutes.
  6. Add the chopped roti to the pan and mix everything together. Cook for a few more minutes until the roti is heated through.
  7. Remove from heat and serve hot.
