Ingredients

  • 500g firm white fish, cut into chunks
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 green chilies, sliced
  • 1 sprig curry leaves
  • 1 cinnamon stick
  • 1 tsp fenugreek seeds
  • 1 tsp turmeric powder
  • 2 tsp chili powder
  • 1 tsp coriander powder
  • 1 can (400ml) coconut milk
  • 2 tomatoes, chopped
  • Salt to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, ginger, green chilies, curry leaves, cinnamon stick, and fenugreek seeds. Sauté until the onions are soft and translucent.
  2. Add the turmeric powder, chili powder, and coriander powder. Stir well to combine with the onion mixture.
  3. Pour in the coconut milk and bring the mixture to a gentle simmer.
  4. Add the chopped tomatoes and season with salt. Simmer for 5 minutes.
  5. Gently add the fish chunks to the pot, making sure they are submerged in the curry. Simmer for an additional 10-15 minutes until the fish is cooked through.
  6. Once the fish is cooked, remove the pot from the heat and let the curry rest for a few minutes before serving.
