Malu Roti (sri Lankan Fish Patties)

Ingredients

  • 500g boneless fish, cooked and flaked
  • 2 onions, finely chopped
  • 2 green chilies, finely chopped
  • 1 tsp ginger, grated
  • 1 tsp garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp curry powder
  • 1/2 cup fresh coriander, chopped
  • Salt to taste
  • 500g all-purpose flour
  • 1 tsp salt
  • Water, as needed
  • Oil for frying

Instructions

  1. In a bowl, mix the cooked fish, onions, green chilies, ginger, garlic, chili powder, turmeric powder, curry powder, coriander, and salt to taste. Set aside.
  2. In a separate bowl, mix the all-purpose flour and salt. Gradually add water and knead to form a smooth dough.
  3. Divide the dough into small balls and roll each ball into a small circle.
  4. Place a spoonful of the fish mixture in the center of each circle, then fold the dough over to encase the filling and seal the edges.
  5. Heat oil in a pan and fry the patties until golden brown on both sides.
  6. Remove from the oil and drain on paper towels.
  7. Serve hot and enjoy!
