Malu Roti (sri Lankan Fish Roti)

Ingredients

  • 500g boneless fish fillets, cut into small pieces
  • 2 onions, finely chopped
  • 2 green chilies, finely chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/2 tsp fennel seeds
  • 1/2 cup coconut milk
  • Salt to taste
  • 4 roti breads
  • Oil for frying

Instructions

  1. In a pan, heat some oil and add the onions, green chilies, ginger paste, and garlic paste. Sauté until the onions are soft.
  2. Add the chili powder, turmeric powder, cumin powder, and fennel seeds. Cook for a few minutes until the spices are fragrant.
  3. Add the fish pieces and cook until they are fully cooked.
  4. Pour in the coconut milk and simmer for a few minutes until the mixture thickens. Season with salt to taste.
  5. Heat a separate pan and lightly fry the roti breads on both sides.
  6. Place a portion of the fish filling in the center of each roti and fold the edges to form a square parcel.
  7. Heat some oil in a pan and fry the fish roti parcels until they are golden and crispy on both sides.
