Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 1 large egg
  • 1 tablespoon smooth apricot jam
  • 1 tablespoon vinegar
  • 1 tablespoon butter
  • 1/2 cup milk
  • 1/4 cup hot water
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 1/4 cup butter

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix together the flour, baking soda, and sugar.
  3. In a separate bowl, beat the egg, apricot jam, vinegar, and 1 tablespoon of butter.
  4. Add the egg mixture to the dry ingredients and mix well.
  5. Add the milk and hot water to the batter and mix until smooth.
  6. Pour the batter into the prepared baking dish and bake for 45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  7. While the pudding is baking, prepare the sauce by heating the cream, sugar, and 1/4 cup of butter in a saucepan over medium heat until the sugar has dissolved.
  8. Once the pudding is done, pour the hot sauce over the hot pudding as soon as it comes out of the oven.
  9. Allow the pudding to soak up the sauce for at least 30 minutes before serving.
