Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 1 large egg
  • 1 tablespoon apricot jam
  • 1 tablespoon vinegar
  • 1 tablespoon butter
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 1/2 cup hot water
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix the flour, sugar, and salt.
  3. In a separate bowl, beat the egg and add the apricot jam, vinegar, and melted butter.
  4. Dissolve the baking soda in the milk and add to the egg mixture.
  5. Add the wet ingredients to the dry ingredients and mix well.
  6. Pour the batter into the greased baking dish and bake for 45 minutes.
  7. While the pudding is baking, prepare the sauce by heating the cream, butter, sugar, and hot water in a saucepan until the sugar has dissolved.
  8. Stir in the vanilla extract and simmer for a few minutes.
  9. Once the pudding is done, pour the hot sauce over the hot pudding as soon as it comes out of the oven.
  10. Allow the pudding to absorb the sauce before serving.
