Malva Pudding Trifle
Malva Pudding Trifle is a delightful South African dessert that combines the rich, sweet flavors of malva pudding with the light, creamy texture of trifle. This indulgent treat is perfect for special occasions or as a comforting dessert after a hearty meal.
Ingredients
- 1 cup sugar
- 1 egg
- 1 tablespoon smooth apricot jam
- 1 teaspoon baking soda
- 1 cup all-purpose flour
- 1 teaspoon vinegar
- 1 tablespoon butter
- 1 cup milk
- 1 teaspoon white vinegar
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup sherry or dessert wine
- 1/4 cup raspberry jam
- 1/2 cup fresh raspberries
- 1/4 cup flaked almonds, toasted
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking dish.
- In a large bowl, mix together the sugar, egg, and apricot jam.
- In a separate bowl, dissolve the baking soda in the vinegar, then add to the sugar mixture.
- Sift in the flour and mix well. Melt the butter and add to the mixture along with the milk. Mix until smooth.
- Pour the batter into the prepared baking dish and bake for 30-40 minutes or until a skewer inserted comes out clean.
- While the pudding is baking, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
- Once the pudding is baked, remove it from the oven and poke holes all over the top with a skewer. Pour the sherry over the pudding, followed by the raspberry jam.
- Allow the pudding to cool slightly, then spread the whipped cream over the top. Decorate with fresh raspberries and toasted flaked almonds.
- Refrigerate the trifle for at least 2 hours before serving to allow the flavors to meld together.
