Malva Pudding Trifle

Ingredients

  • 1 cup sugar
  • 1 egg
  • 1 tablespoon smooth apricot jam
  • 1 teaspoon baking soda
  • 1 cup all-purpose flour
  • 1 teaspoon vinegar
  • 1 tablespoon butter
  • 1 cup milk
  • 1 teaspoon white vinegar
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup sherry or dessert wine
  • 1/4 cup raspberry jam
  • 1/2 cup fresh raspberries
  • 1/4 cup flaked almonds, toasted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix together the sugar, egg, and apricot jam.
  3. In a separate bowl, dissolve the baking soda in the vinegar, then add to the sugar mixture.
  4. Sift in the flour and mix well. Melt the butter and add to the mixture along with the milk. Mix until smooth.
  5. Pour the batter into the prepared baking dish and bake for 30-40 minutes or until a skewer inserted comes out clean.
  6. While the pudding is baking, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  7. Once the pudding is baked, remove it from the oven and poke holes all over the top with a skewer. Pour the sherry over the pudding, followed by the raspberry jam.
  8. Allow the pudding to cool slightly, then spread the whipped cream over the top. Decorate with fresh raspberries and toasted flaked almonds.
  9. Refrigerate the trifle for at least 2 hours before serving to allow the flavors to meld together.
