Malvani Mutton Koliwada Biryani
Malvani Mutton Koliwada Biryani is a flavorful and aromatic dish from the Malvani cuisine, known for its rich and spicy flavors. This biryani is a perfect combination of tender mutton pieces and fragrant rice, cooked with a blend of traditional Malvani spices.
Ingredients
- 500g mutton, cut into pieces
- 2 cups basmati rice, soaked
- 1 cup yogurt
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 4-5 green chilies, slit
- 1/2 cup chopped coriander leaves
- 1/2 cup chopped mint leaves
- 1/4 cup oil
- 2 tbsp ghee
- Whole spices: bay leaf, cinnamon, cardamom, cloves
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tbsp biryani masala
- Salt to taste
- 2 cups water
Instructions
- Marinate the mutton with yogurt, turmeric powder, red chili powder, biryani masala, and salt. Let it marinate for 1 hour.
- Heat oil and ghee in a large pot. Add the whole spices and sliced onions. Saute until the onions turn golden brown.
- Add the marinated mutton and cook until the mutton is tender.
- In a separate pot, boil water and add the soaked rice. Cook the rice until it is 70% done. Drain and keep aside.
- Layer the partially cooked rice over the mutton in the pot. Sprinkle chopped tomatoes, green chilies, coriander leaves, and mint leaves on top.
- Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes until the rice is fully cooked and aromatic.
- Gently mix the rice and mutton before serving.
