Malvani Mutton Koliwada Biryani

Ingredients

  • 500g mutton, cut into pieces
  • 2 cups basmati rice, soaked
  • 1 cup yogurt
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 4-5 green chilies, slit
  • 1/2 cup chopped coriander leaves
  • 1/2 cup chopped mint leaves
  • 1/4 cup oil
  • 2 tbsp ghee
  • Whole spices: bay leaf, cinnamon, cardamom, cloves
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tbsp biryani masala
  • Salt to taste
  • 2 cups water

Instructions

  1. Marinate the mutton with yogurt, turmeric powder, red chili powder, biryani masala, and salt. Let it marinate for 1 hour.
  2. Heat oil and ghee in a large pot. Add the whole spices and sliced onions. Saute until the onions turn golden brown.
  3. Add the marinated mutton and cook until the mutton is tender.
  4. In a separate pot, boil water and add the soaked rice. Cook the rice until it is 70% done. Drain and keep aside.
  5. Layer the partially cooked rice over the mutton in the pot. Sprinkle chopped tomatoes, green chilies, coriander leaves, and mint leaves on top.
  6. Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes until the rice is fully cooked and aromatic.
  7. Gently mix the rice and mutton before serving.
