Malvani Prawn Pulao

Ingredients

  • 1 cup basmati rice
  • 250g prawns, cleaned and deveined
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1/2 cup coconut milk
  • 2-3 green chilies, slit
  • 1-inch ginger, grated
  • 4-5 garlic cloves, minced
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 2-3 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Wash the basmati rice and soak it in water for 20 minutes. Drain and set aside.
  2. Heat oil in a pan and sauté the chopped onions until they turn golden brown.
  3. Add the grated ginger and minced garlic, and sauté for a few minutes.
  4. Now, add the chopped tomato and cook until it turns soft.
  5. Add the turmeric powder, red chili powder, and garam masala. Mix well.
  6. Add the cleaned prawns and cook for 2-3 minutes.
  7. Pour in the coconut milk and bring it to a gentle simmer.
  8. Stir in the soaked and drained rice. Add salt to taste.
  9. Add 2 cups of water, cover the pan, and cook on low heat until the rice is done and the prawns are cooked through.
  10. Garnish with fresh coriander leaves and serve hot.
